Penne Pasta

Ingredients

  • 6 Tablespoons Extra Light Olive Oil
  • 1 Can Chicken Broth
  • 3 Cloves Garlic
  • 2 Teaspoons Dried Basil
  • 1 Teaspoon Red Pepper
  • 1 Pound Penne Pasta
  • 2 1/2 Cups Havarti Cheese
  • 1/2 Cup Parmesan Cheese
  • 1 1/2 Cups Sweet Onion
  • 3 Cans (28 ounce cans) Cento Plum Tomatoes

Preparation

  • Heat 3 tablespoons of olive oil in a large pan.
  • Add chopped onions and minced garlic and saute.
  • Mix in tomatoes, basil, and red pepper.
  • Bring to a boil and break up tomatoes.
  • Add broth and again bring to a boil.
  • Reduce heat and allow to simmer for 30 minutes.
  • Cook pasta and drain.
  • Add remaining 3 tablespoons of olive oil to pasta and toss.
  • Mix pasta with sauce and havarte cheese.
  • Put in 9×13 baking dish and sprinkle top with parmesan cheese.
  • Bake at 375 for 30 minutes.
