Cayce's Chicken Fried Rice

Boneless Chicken Breast - 1.25 pounds
Vegatable Oil - 1 tablespoon
Egg - 2 large
Zucchini, Green Italian Squash - 2 medium
Sweet Onion - 1 large
Butter - 1 tablespoon
Water - 3.5 cups
White Rice, Minute, Instant, Long Grain - 4 cups
Soy Sauce - 6 tablespoons
Salt - to taste
Chicken Bouillon cubes - 2 pieces

Cut up chicken, zucchini, and onion. Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until chicken is cooked. In a separate skillet cook zucchini and onions with butter. Scramble and cook two eggs in the large skillet while chicken finishes cooking. After chicken and eggs are cooked, add bouillon cubes, water, and soy sauce. Bring to a boil. Stir in rice, cover. Reduce heat to low and cook for 5 minutes. Stir in vegatables and serve. Season with additional soy sauce and salt, if desired. Makes 4 servings.
