Bruschetta
Chopped Tomatoes (15 oz.) - 1 can
Sweet Onion - 1/2 cup
Garlic - 2 cloves
Extra Light Olive Oil - 1 tablespoon
Parmesan Cheese - to taste
Baguette - 1 loaf
Drain tomatoes and saute with onions, garlic and olive oil over medium heat. Salt and pepper to taste. Slice baugette into 1/4 to 1/2 inch slices. Toast slices on a cookie sheet in the oven at 400 to desired crispness. Flip the slices to toast more evenly.
Drain mixture and place on toasted slices and top with grated parmesan cheese.
